Herbed Hasselback Sweet Potatoes

Are you a fan of sweet potatoes?! Even if you aren’t, I promise you will be after one bite of these Herbed Hasselback Sweet Potatoes. They are not only beautiful but get a crispy outer shell with a soft, melt in your mouth inside. These are perfect to make for holiday gatherings or for a festive side to go along with dinner.

These are super simple to whip up and all you have to do is know how to slice. But I'm sharing my secret below. Throw them into the oven and an hour later you have your starchy side ready to go. If you're following any specific dietary pattern they can fit into Paleo, Low FODMAP, Vegan, Gluten and Dairy Free living as well as Whole30 approved!

I have to admit I was one of those girls who barely ate carbs and especially limited them after 3pm. I had a war in my head against carbs. I wouldn’t touch bread, rice or pasta and if I had a bite I would feel my day was ruined. I convinced myself carbs made me fat and thought if I gave up the entire food group I would be skinny and feel better.

However, it turns out, I was just punishing my body. It did work for a little bit but it was unsustainable and it made me so moody. Then in college I began my nutrition journey and I had to unlearn diet culture, along with the shame I had around food.

Healthy looks a lot different on me now, as years later, I've found Food Freedom. Carbs are delicious and bring me joy! Looking back I can’t believe I spent years depriving myself of their starchy goodness. Give me all the bread, overnight oats and sweet potatoes!

Why Do We Need Carbs?
Carbs are an important part of a balanced diet. They provide the largest source of energy in our diet. Think about it this way, as the building blocks of carbs are glucose. When we eat carbs our body breaks them down into glucose molecules and are used for energy. Now when carbs aren’t needed our body stores them for energy later on. Glucose is the fuel to keep our brains focused and our muscles need carbs during strenuous exercise!!

What Makes These Sweet Potatoes Special?
Herb oil is the trick that makes these shine! It’s so simple to make using real ingredients that you may already have these in your pantry. Gather avocado oil, freshly grated garlic, parsley, onion, thyme, salt and cinnamon in a small mixing bowl. That’s all it takes and even better this herb oil can be used in other recipes such as roasting any type of veggie or toss into pasta!

How to Slice Hasselback Style?

Choose narrow potatoes that are similar in size. Slice potatoes into 1/8” slices without slicing all the way through (want to leave about 1/4in of potato intact). Do this by placing wooden spatulas on each side, so you don't slice through. It's that easy!
